Rubs, Glaze, & Sauces...Oh My!

4 Tablespoons kosher salt
3 Tablespoons chili powder {pasilla powder}
2 Tablespoons dried granulated garlic ( garlic powder}
1 Tablespoon ground thyme
2 teaspoons sugar
2 teaspoons ground cumin
2 teaspoons ground black pepper
Mix ingredients in food processor until well blended. Store in sealed container to keep fresh. Before applying to meat mix 3 Tablespoon of grill mix with 1 Tablespoon of fresh ground {used} coffee grounds and rub on both sides of meat 10-15 minutes before grilling.
Great for ribeyes
Tart Orange Glaze
6 oz orange marmalade
2 teaspoons balsamic vinegar
.25 teaspoon crushed red pepper
Mix all ingredients together in a non metallic bowl. Brush on during last few minutes of grilling.
Works well on salmon and
chicken.
Pineapple BBQ Sauce
1.5 cups chili sauce
12 oz pineapple preserves
1 cup crushed pineapple (drained)
1/3 cup apple cider vinegar
Mix all ingredients together and brush on meat during last half of grilling.
